Zucchini Fritters

We love fritters in this house. Broccoli, cauliflower, zucchini, you name it. Whipping up fritters for the family allows you to layer your vegetables with a ton of flavor. This is how you get your children to avoid being picky about things that are seemingly healthy for them. Zucchini is high in antioxidants, contributes to healthy digestion and is high in fiber. I loaded these with cottage cheese for a calcium boost, and served them with a big scoop of herbed yogurt, which is a great source of protein to add to any vegetarian dish.

We have been blessed to have just enough space in our backyard where I decided to build a container garden last year. It has been the light in our tunnel ever since. I have planted just about every herb you can think of from parsley and dill, to rosemary and oregano. Going on last minute trips to the grocery store because I forgot the cilantro are long gone. I can’t recommend this enough. Even if you don’t have a yard, try utilizing a window seal in your house with just a few mason jars and some soil and see how far it’ll take you.

Anytime I’m making something now I just pop into my little garden… and by little I really do mean just 1 square foot, and cut some green and fresh to go on top or inside my dish. The herb yogurt you see in the video below includes some fresh cut parsley I had snipped just moments before. Another great thing to add to these fritters is gluten free flour. They absorb well into the dish and can easily be balanced with herbs and spices. My go-to’s in our house are:

  • Cassava Flour - Slightly earthy and nutty flavor. Gluten, grain and nut free. Has a high resistance starch content. Is soft and powdery in texture and can be hidden under other flavors unlike coconut or almond flour. because of this it can be replaced on a 1.1 basis for wheat flour.

  • Oat Flour - Subtle, sweet, nutty flavor. A gluten free form of whole wheat flour and great alternative for fritters. Can make baked goods more flavored than AP flour and leave a more chewy, crumbier texture as well.

  • White Rice Flour - Has a very light texture and neutral flavor. Can taste like whatever you’re attempting to make it taste like. Also great for fritters. Less crumbier than the oat flour mentioned above. I actually like to use a custom mix of oat and rice flour for a perfect balance.

Gluten Free Zucchini Fritters:

2 medium sized zucchinis

1 green onion

1/4 cup of cottage cheese

1/2 teaspoon cumin

1/2 teaspoon garlic power

1/2 teaspoon onion power

1 cup cassava

2 eggs

salt & pepper

Rinse your zucchinis really well then roughly chop and add to a food processor. Pulse until finely chopped. Ring out the excess juice with a nut bag or cheese cloth or let sit in a sieve for a few minutes to drain. Place into a bowl and add chopped green onions, spices, eggs and salt and pepper. Give a good mix then add flour and mix again before adding cottage cheese. Fold in to combine.

Heat some avocado or extra virgin olive oil up in a non stick pan and add 3 large spoonfuls of fritter dough to form little cakes. Grill on each side for about 4-5 minutes on medium until desired texture is reached. Taste for flavor and sprinkle a little more salt if needed right at the end of cooking plus a squeeze of lemon if needed. Serve with herb yogurt. We simply add some fresh parsley, lemon and salt and pepper to make herb yogurt. Eat and enjoy!
