Sweet potatoes have some serious comfort food appeal. Am I right?! No matter how I make them my daughter seems to devour them. I made an attempt to make sweet potato fondant tonight and my goodness did they taste rich and delicious. These are so easy to make you won’t believe it.
Here’s how I did it:
2 large sweet potatoes, peeled and cut into rounds
1 cup vegetable broth
3 tbsp butter
3 sprigs of thyme
1 bay leaf
1/2 tsp salt
Lime zest plus juice of lime
Start by preheating your oven to 400°. Next peel and cut your potatoes to your desired size. I used 1” round ring molds but you could just use a knife. Set all your other ingredients in place and heat a cast iron skillet over medium high heat. Once hot add half of your butter, then place all your sweet potatoes in the pan giving some space between them.
Sear on each side until nicely seared and browned, about 2 minutes a side. Deglaze the pan with your broth, add your thyme, bay leave and the rest of your butter. Once simmering place the pan in the oven for about 12-15 minutes until softened. Remove from oven and zest some lime plus add a squeeze of lime juice to them. Sprinkle with flaky salt and enjoy!
