The postpartum period is where time is a blur, sleep is an abstract concept, and your daily achievements range from “I brushed my teeth!” to “I successfully Googled ‘why is my baby making dinosaur sounds?’” You've just had a baby, so, this is totally OK! Give yourself the grace to satisfy your taste buds without beating yourself up after childbirth. Nutrition is technically important during this time, but sometimes, food should be about feeling good. Like, really, really good.

Enter: Plantain Flatbread.

This recipe is a postpartum snack superhero, minus the cape. No need to Google obscure ingredients or summon energy you don’t have. It’s quick, simple, and most importantly, it tastes like a warm, carb-y hug.

The Recipe: Easy-Peasy Plantain Flatbread

Ingredients:

  • 1 ripe plantains (the blacker, the better)
  • 1 ½ cups all-purpose flour
  • 2 tablespoons coconut oil or olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1/2 cup ice cold water

Instructions:

  1. Peel & Mash:
    Peel those plantains like you peel away any guilt over screen time. Mash them until they resemble the texture of your sanity after a 2 a.m. wake-up call. Lumpy is totally fine.

  2. Mix It Up:
    Add the flour, coconut oil salt and baking powder. Mix until it’s as smooth as possible without breaking a sweat. Remember: “Effort” is a four-letter word right now. Let sit in a bowl covered with a tea towel for about an hour or 2.

  3. Flatten & Fry:
    Form the dough into little patties and flatten them with your hand or rolling pin. Add a little flour if dough is too sticky. Add a little oil to a skillet over medium and pan sear until golden brown on each side (about 3-4 minutes). 

  4. Enjoy Warm:
    Serve these beauties while they’re warm and toasty. Serve with whatever your heart desires or eat them just by themselves. Bonus points if you eat them while hiding in the kitchen for two minutes of alone time.
